Blueberry Cottage





                             Cheese Pancakes

     Ingredients:                                                    Procedure:



           1/2 cup rolled oats                                          1. In a blender, combine the rolled oats, cottage cheese,



           1/2 cup low-fat cottage cheese                                 eggs, baking powder, and vanilla extract. Blend until

                                                                          smooth.
           2 large eggs

                                                                       2. Heat a non-stick skillet over medium heat and add the
           1/2 tsp baking powder

                                                                          coconut oil.
           1/2 tsp vanilla extract

                                                                       3. Pour 1/4 cup of the batter into the skillet for each
           1/2 cup blueberries
                                                                          pancake.
           1 tsp coconut oil
                                                                       4. Add a few blueberries to each pancake and cook for 2-3


                                                                          minutes on each side, until lightly browned and cooked

                                                                          through.


                                                                       5. Repeat until all the batter is used up.


                                                                       6. Serve immediately with a drizzle of maple syrup, if


                                                                          desired.
